healthy pasta lunch
start by tossing some spinach and a tablespoon (or two depending on amount of spinach) of olive oil into a pan, sauté on medium low heat.
boil some water
toss in your pasta and turn the heat down to medium high…for a healthier option try a whole grain (I love homemade pasta from the local Italian place up the street…look for one in your area!)
add sliced mushrooms and diced tomatoes to the spinach, cover with a pan top (so the steam helps soften)
strain pasta, add in spinach, mushrooms, and tomatoes (including juices)
for additional flavor add 1-3 tablespoons of your favorite oil based salad dressing… I love using Newman’s Own Raspberry Walnut or Lime Vinaigrette
