Monday Munchies: Open Face Avocado, Egg, & Toast

When you’re looking for a quick fix breakfast/brunch a favourite go-to of mine is open face toast; avocado, egg, spinach, and spices for this version…

What you’ll need:

-2 eggs

-olive oil

-avocado

-slice of bread

-handful of spinach

-pepper

-cumin

-hot sauce

1.Divide an avocado; slice one half into equal segments.

2.Put olive oil in a fry-pan at low-medium heat and crack 2 eggs.

3.Toast your slice of chosen bread, letting it cool on the plate.

4.As the egg cooks, before it’s solid; fold it over on itself so it more closely resembles the size of your slice of toast. Add a handful of spinach to the fry-pan.

5.Once the toast has cooled, add the slices of avocado; give a few turns of pepper.

6.Once the spinach has softened, remove from the fry-pan and add it evenly on top of the avocado.

7.When the egg has cooked to your preference (I prefer an almost cooked through yolk, with just slight softness) add on top; sprinkle with your chosen spices (I kept it simple with cumin – and then topped with hot sauce).

et voila!
