It’s become comfort food and ‘winter body’ weather outside; but I refuse to give in to (too much) unhealthy eating. And with ‘no excuses’ in mind, this Monday’s Munchies post is all about the perfectly mixed fruit and veg. salad!
What you’ll need:
-pepper (orange or yellow)
-balsamic (I chose a strawberry reduction for sweetness)
1: Chop vegetables; I like to quarter my cucumber and slice my celery stalks in half, than slice into pieces as shown above.
2: Toss chopped vegetables in olive oil; make sure they’re mixed well with a good coat of oil.
3: Slice strawberries in quarters, dice feta cheese; leave raspberries whole – they’re delicate so they’ll break up while mixing into the salad.
4: Combine mixed greens and spinach with vegetables. Toss until everything has a light coating of oil – add more if needed.
5: Divide into bowls; drizzle with chosen balsamic reduction and top with equal amounts of berries and cheese. Topping, instead of mixing, helps keep the delicate berries and crumbly cheese intact so they won’t muddle into a general flavour, but add their flavour in full.
Et voilà, the perfect mix of sweet and savoury salad. Enjoy your healthy eating!
