Monday Munchies: Quick Rice Bowl Dinner

It’s Monday.

We lost power for over half the day thanks to a gas leak that shut down the entire block. Mondays are generally more chaotic, rushed, frantic; ect. on the synonyms for busy. In keeping with the mayhem, I decided a quick and simple rice bowl was the key for dinner.

What you need:

-Rice

-Red Pepper

-Red Onion

-Pineapple

-Tomato

-Hemp Hearts

-Hot Sauce

This easy meal takes as much time as it does to cook rice (about20-25minutes; check the label on the rice of your choice; white, red, mix…) I went with mixed jasmine rice and chopped up some red pepper, tomato, red onion, and pineapple (a surprisingly tasty balance of tangy and sweet). Toss in the chopped choices to the pot when it’s pulled from the heat of the burner to ‘sit and set’ (with most rice it’s 5minutes of sitting, after 20minutes of cooking). Serve in a bowl, sprinkle hemp hearts, and your choice of hot sauce.

ps. My go-to rice from the market doesn’t come with instructions, so I follow: add 1part rice, 2 parts water to a pot. Bring to a boil. Turn to simmer, cover with lid. Cook for 20minutes. Remove from heat and let sit for 5minutes. Fluff rice.
