It’s not the usual way to scramble an egg; but if you’re a fan of flavour, it’s a way to try!
What you need:
-tomato pasta sauce
1.cover the bottom of the pan in tomato pasta sauce; add a dash of olive oil and stir to combine. Heat over low-medium.
2.crack eggs; I used 5 for 2 portions. The trick is to not pre-scramble the eggs, but to crack them directly into the sauce in the pan.
3.stir eggs and sauce together in the fry-pan. (I use a wooden spatula when making scrambled eggs.) Sprinkle black pepper once eggs and sauce are combined.
4.continue heating on low-medium, turning eggs frequently as you would normal scrambled eggs until fully cooked.
